Sandy's Zucchini Appetizer
This delicious appetizer was given to us our friend Sandy Shepard. Sandy is not only a great cook, she is a well known local artist and a genuine sweetheart. She made this for a party one night and we all fell in love with this light, creamy, yummy treat. It's quick and simple and perfect for your next party.

  • 1 c. Bisquick Mix
  • 3 c. shredded squash zucchini
  • ½ c. onion
  • ½ c. Parmesan Cheese
  • ½ tsp. Salt
  • 2 Tbls. Parsley (snipped or flakes)
  • Seasoned ½ tsp salt
  • ½ tsp. Dried marjoram or oragano
  • Dash of pepper
  • 1 clove of garlic finely chopped
  • ½ c. vegetable oil
  • 4 eggs slightly beaten

Heat oven to 350 degrees. Grease oblong pan, 9 x 13 x 2". Mix all ingredients. Spread in pan, bake until golden brown, about 25 to 30 minuets. Cut into pieces about 2 x 1". Makes 4 doz.
