Sharon's Triple Onion Tart

  • 1 9" pie crust (you can use the pre-made pie crusts that come in a roll)
  • 1/4 cup butter
  • 1 sweet Vidalia or Walla Walla onion sliced thin
  • 1 large leek sliced thin
  • 2 shallots sliced thin
  • 1 tsp. sugar
  • 1/2 tsp. ntumeg
  • 1/2 tsp pepper
  • 3 ox. cream cheese
  • 3/4 cup EACH shredded swiss cheese, shredded Pepper Jack
  • 3 egges lighty leaten
  • 2/3 whipping cream

Preheat oven to 375°.

Cook onions, sugar, nutmeg, pepper and 3/4 tsp. salt until tender. Stir in cream cheese until melted and then add swiss and pepper jack.

In a large bowl combine eggs & cream and then gradually stir in onion mixture. Pour in pie shell and bake uncovered 40 minutes. Cool 15-20 minutes before serving.
